Two simple herbal recipes

Garlic Honey

Especially useful for fighting respiratory infections - colds, flu, coughs - and ear infections. Also lowers high blood pressure and helps prevent strokes and heart attacks.

  • Half a jar of good quality honey
  • 1 bulb of garlic

Method

Simply crush the garlic and stir it into the honey. Store in a cool place.

Take 1 or 2 tsp daily

Thyme and Liquorice Cough Syrup

Eases tight chests, sore throats and coughs.

  • 2 tbsp liquorice root shredded or finely chopped
  • 2 tbsp dried thyme
  • 500ml/1 pint of water
  • 200g/5oz honey or sugar

Method

  1. Put the chopped liquorice root in a pan, add the water and bring to the boil. Cover with a tight fitting lid and simmer gently for 20 mins.
  2. Remove the pan from the heat, add the thyme, stir, place a lid on the pan and leave to infuse for 20 mins.
  3. Strain the mixture into a measuring jug or another pan.
  4. Return the liquid to the heat and, once warm, add the honey or sugar.
  5. Dissolve slowly and simmer for a few minutes, stirring all the time, until you reach a syrupy consistency. Let the mixture bubble for a moment, but do not overheat as it will turn into caramel toffee instead.
  6. Allow to cool.
  7. Pour the mixture into clean bottles and label with the name, date and dose. Use within 6 months.
Dose
  • Adult: 2-3 teaspoons 3-6 times daily.
  • Child: 1 teaspon 3-4 times daily.
